What happened to being able to schedule UPS pick ups the same day? Now I can only have pick ups the next day and it gives me a 4 hour window instead of an hourly selection. This new UPS scheduling is awful is there any sort of work around? We are going to have to look at other shipping options if this is the new normal.

Not sure what the issue is. Have you tried to contact Shopify support or UPS support? They might surely be able to help you out.
If you still facing a problem, you can look into different apps that help you handle UPS pickup.
I would suggest you try the Shopify Multi-Carrier Shipping Label app which helps you automatically schedule Pickup for all orders with a single click. You can also create an Ad-hoc pickup by entering the details like shipping address, carrier, pickup date & time, company close time, etc.
