Is there a way to change the delivery method for an order? Eg. if a customer was planning to pick up the order but instead needs it posted out to them? Seems like a simple function that should be easy to do but I can’t see where to make this change.

I think you will need to duplicate the order as draft, add shipping, mark draft as paid, then cancel the original.
You can’t directly change the delivery method on an existing order. The usual way is to duplicate the order as a draft, update the shipping method there, mark it as paid, then cancel the original order.

Yes, but Shopify doesn’t let you switch an order from local pickup to shiping after the order has been placed. A usual workaround is to capture the customer’s shipping address, create a draft order for the shipping charges if applicable and then fulfill the original order with the new shipping information. Depending on your workflow, you can also edit the order to apply any additional fees prior to fulfillment. Make sure the customer also confirms the change in writing, keep that for your records.
