Going into “Edit default theme content” > Products to change “Inventory in stock” and “Inventory out of stock” does not affect/change the labels used in the Collection > Filter > Availability text.
Similarly, using this tutorial to create a custom theme and change the values in en.default.json also has no affect on the locally-served development store.
