I am looking for a way to vary this status.
I have many products with different delivery times. Are there apps for this, how can this be solved? I could imagine tagging a product and then it would show what I want, something like that. Do you have any ideas?

@pfannenwender Are you not able to just used the actual inventory quantity as is?
Why show different information to customers than what is the stock on hand.
If not an advanced theme customization could be done where values are calcuted based on some business logic using the underlying inventory_quantityr, or from metafields are used instead, or tags, depends on your workflow needs

You can use the Easify Product Options app (free plan available) to create custom content for your delivery times. Simply use the Paragraph option type to add the information and assign it to your products based on product tags.
