I’m curious about whether having multiple apps can affect the speed of my Shopify website. What is the maximum recommended number of apps?

Apps can slower your website. It is not merely the number but the app it self. If you run your page speed here. You will see that some apps are blocking the scripts that makes your website run slower. Some apps also uses document.write that makes the website slow too.

Some will, and some not. Shopify has many requirements for app developers, so it must not affect too much to speed of stores ( under 10%).

The short answer is yes. But you need to have many apps installed before it will have a noticeable effect.
However, over time you will still experience this, as all apps leave some lines of code in your theme.liquid file. Even after an app is uninstalled, the code will remain in your codebase. And over time, it will make a noticeable difference in your store’s speed.
I have just released this app, which I am collecting feedback on until the next iteration. In short, the app can scan and identify unused - and unwanted - code in your codebase and help you delete it.
It’s completely free for now. Later, I will introduce paid plans for more features.
