I was so excited to see that the edit button from the product page was back. Until I went to use it. Can’t do much other then the title and description. I’d love it to be like is was…being able to edit everything…Including the metafields etc…

If what you actually want is that quick edit button itself to handle metafields and everything else so you don’t have to open the full editor, that’s a fair ask, but posting it here won’t reach the team that builds it. Drop it through in-app feedback and on community.shopify.dev where the product team actually engages. The specific “let me edit metafields from the quick edit panel” detail is the kind of concrete request that lands better than a general one.
