Hello, can anyone please tell me how these custom product pages are made, whether it’s a custom code or a page builder app? Most of the Shopify product pages that I liked have a link that starts with shop.nameofthebrand.com/pages - so this makes me think it’s a third-party app or something similar?

I believe that this is a custom code template.
The wrong way to do this would be
if you go to Admin > Online Store > Themes > Edit Code and then on the left panel under templates add a new template page.template-name.liquid then you can populate that file with whatever you would want that page to display. Additionally, to activate this you will have to create a new page in Admin > Online Store > Pages and then edit the the theme template selection on the right sidebar to be of template-name. This will allow you to display in the page whatever content you wish by editing that template file.
However, the above mentioned method is how I believe https://shop.truvani.com/pages/chocolateplantprotein has done it, not how it should be done.
The correct way would be add a product.template-name.liquid which would allow you to completely customize the page as well but behave as a product template that you can similarly edit in the product edit screen in Admin > Products > Click on product to edit and then on the right change the product template to template-name. This will also allow you to display whatever you want on the page but this will avoid creating an unnecessary page and reflect the design on your product page instead of another page.
Note: template-name is a completely arbitrary choice you can pick whatever name instead.
