I have 4 pages on my shopify: Home, Products, Ingredients, and Contact. I am trying to add an “About Us” page but every time I do, I only have two options:
If I use Default Page, it duplicates my ingredients page and if I use contact, obviously it duplicates the contact page. Whenever I change anything on the new page, it also changes the other page.
How can I create a blank new page or new page template?

@untamedtallow Theme “pages” creation are controlled in the theme editor.
You have to create new alternate templates there in the editor if you wish for a resource(page,collection,etc) to have a template with different settings from every other resource of the same type.
This means if your in the visual theme editor changing settings for a page then EVERY page that uses that specific template being modified will also use those settings as well.
Then the assignment of that new template happens back in the resources admin, pages or collections or products etc.

By default, all pages share the default template. You can totally create different templates for different pages and then assign your pages to a specific template with the page editor
From your Shopify admin, go to Online Store > Themes > Customize
Select Pages > Default Page from the page selector then click on Create template
Next, you’ll need to assign pages to each template:
From your Shopify admin, go to Online Store > Pages
Use the search filter to locate the page that you want to change, or click on the page from the list of existing pages.
In the Online store section, use the dropdown menu to select a new theme template to apply to the selected page.
Click Save.

I found this thread by searching the community.
For some strange reason after following these steps “Select Pages > Default Page from the page selector” all of the options are greyed out.
I’m working in the Shopify program.
The Create a new template option doesn’t show up for me. I’m using debut. What can I do to get the option to show up?
You have to click customize to get into page editing mode first and THEN it’ll be in the middle at the top of the page. I searched for ages on the page before (where you can select the theme itself). 
Unfortunately this doesn’t work for me. I’ve customized like 6 templates but on any Page at Theme template I can still see only Default and contact. Can somebody please help me?
Check the theme files make sure the page template actually exists for the theme being edited.
If exists you’ll need to read the code to see if it has any issues that make it unusable.
After that try in a different browser with a clear cache.

Ay! IDK if ur still here but can you delete these or nah?
By now I’ve already figured out the solution. It’s so easy, but it took a while… So: you can only add a new template, and your own customized templates are only visible if you publish your theme. You will never see them if you’re editing an unpublished theme. A bit frustrating, but it works.
