How can I set-up a safety stock? E.g. making sure that I’ll always have 5 products in stock, and products appear out-of-stock when the stock level passes the threshold of 6.

You would need to use an inventory management app to create a safety stock buffer. It is an easy formula to set up whether it be a calculation based on your sales or simply a value for every product that is used to reduce actual stock. Our platform uses a restock value field for automating purchase order creation. If you don’t find a different solution we could set your products up based on your logic and automate safety stock for them similar to how we treat restock values in our system.

Can you solve for this with Shopify’s safety stock feature?
If your true on hand inventory is 100 and you want your buffer to be 10, you can add 10 to safety stock and make 90 available for purchase. When people by 90 units of your product, the product will show as out of stock.
The one annoyance is that by default, if you add 10 safety stock to a 100 on hand units, Shopify will show 110 on hand units and 100 available. So you will need to adjust it to 100 on hand and 90 available with a few clicks.
