So i would like to offer the option to insure the order, without any third party app. For example in the drawer cart there would be a slider/checkbox that would allow a product called ‘shipping insurance’ be added to the cart. When it is unchecked or deselected it is removed from the cart. That is the simple way. I would love for the cart to total to dictate which variant of the shipping product gets added (price would increase as cart total increases).

You have two options for this:
Create a variant for the shipping insurance. This customer will need to select this in the product page before adding it to the cart.
You can set this up in the shipping settings. You can have something like: A. Standard shipping, B. Standard shipping + insurance.
If you really need this to be in the cart section, then this will need to be either custom coded by a developer or via app. I hope this helps.
