I would like to apply the same effect from the Adidas site on the Shopify Symmetry theme.
When I scroll down the site I want the header to disappear and when I scroll up it reappears.

Your header needs Customize with Javascript.
You should hire someone who knows coding or an expert in Shopify programming, they can help you with this.
In addition, you can contact the theme provider you are using, maybe they can help you fix it.

To make the header sticky as the demo, you need to change a lot of code,
In this case you can contact with theme supporter, or hire an expert to help you change the theme code.
