How to customise filters in product categories

My theme doesn’t offer filtering. My collection page are showing a default and random filter range which seems to be driven by the shopify platform and is based on tag words. How can I amend it? Is it possible to have different filters for each product categories. Here is an example: https://www.artisanoliveoilcompany.co.uk/collections/premium-olive-oils?filter.v.availability=1&sort_by=created-descending

I am not familiar with coding so easy fixed through the shopify backoffice would be ideal for me. Thanks in advance

Your store is using Storefront filter. Thus you need to install the Shopify Search & Discovery app to manage the filters.
