Is it possible to keep the desktop version of my website the exact same but have a different theme for the mobile version? I want to customize the mobile version separately.

This is not possible, you can only have one live theme per store. Mobile-only modifications are surely possible by using media-queries to control block display and creation between desktop & mobile. Let us know if you need any help with that!
