You can create a separate product template for products for which you want to hide the quantity selector, and then hide it from your theme customization.

The most effective and easiest way to hide the Quantity Selector for the specific products is to create a New Product Template and then hide the Quantity Selector from there.
Here is how you can do it.
Go to Shopify Admin >> Online Store >> Themes >> Customize theme >> Click on Home Page From above >> Click product >> Add a New template.

Wow! you just create a template. And you can name any to the template. After that you have to assign the Newly Created template to the products.
