Does anyone know how to (or have an app recommendation) that would allow me to measure and report on how fast items sell? For example, I’d like to be able to compare that we launched Item A and it sold out in one day vs Item B which took two weeks to sell out. Or that plus size variants, or a particular color variant, is selling faster than other variants. I’m not seeing a Shopify report that provides this sort of info but maybe I’m missing it or need a 3rd party app to accomplish this.
You need a Sales Velocity (Average Daily Sales), in Advanced Reports, you can easily retrieve it for variant, product, product type, or even collection.
After app installation, contact our support team (chat) and we will add these columns to reports.

When we made it live on any sales channel.
So the published date would be used. Yes, this will require a reporting app. Our Report Toaster app could do this. Please feel free to install and take a look around. Then reach out to support and we can create some calculated fields for you to show how long it took a product to sell out. Thanks!
