Inventory for Demonstration/Display stock - best practice

Set up a Shopify shop for my bricks and mortar store a couple of months back, have not used inventory but now want to start with purchase orders and stock control…

Shop has 600 items with 2700 variations - all available to see, most available to click to buy

We keep maybe 20 items in stock in the stockroom - we mostly order to order

We have maybe 50 items on display in the showroom.

I want to use shopify to track inventory, to be fulfilled from the stockroom (even if we have no stock) so that is no problem with the continue selling if out of stock

Most of the time I do not want the display items to be available as stock to buy - because it needs to remain on display, we would order a new item for the order. But I want to be able to count the display items and see them in my inventory for stocktake purposes. I do not want them to be seen online either. ( I do not have stock amounts showing anyway)

However, if there is a stock shortage or it is an item I want to move along, we may decide that a particular display item can be sold in person.

Should I create 2 stock locations - showroom and stockroom and only have orders fulfilled by the stockroom?

Would the display items still be choose-able from the POS if I decided to sell the display item in store?

Or, should the display items be separate ‘products’ eg XXXX (display) - but then I would need to not only make them unpurchaseable but also hidden from the ecommerce store.

Not sure how to proceed!
