There are lots of reports and I can see profitability by product…
But what I really needs is a report by order that will show me:
Order #. Revenue. Tax. Expense(Cost). Shipping(Cost)
You could get a report including all that fields by selecting a Sales over time report ( Analytics > Report > Sales over time on Sales section). You could adjust which fields appear on a report by clicking Edit Columns, checking the corresponding boxes.

Shopify does not include Shipping costs or Transaction fees (another component of profit) on any sales reports.
