For some reason Shopify doesn’t let me do this. I don’t want to have my home page be all my collections, I don’t have any collections. I just want it to be a grid of my products so that users can click on each one and see the details. None of the options in the direct site editor can do this so I assume I’ll have to use code.

Caution loading 30+~50+ products data/media etc on the homepage unless you like high bounce rates.
Dawn is on version 15 Install a new version of the Dawn and explore the newer sections.
Keep in mind if you have a lot of products most sections have sane upper limits on how many products can show at once and overriding that is an advanced theme customization and not advised unless you also have the budget/experience to optimize site performance.
If the available sections aren’t suitable or you cannot upgrade/change the theme, and you still need a single-page product grid customization then contact me by my email for services.

Because Shopify allows the display of a maximum of 50 products per page on the collection page so, if you want all appear products, you can add multiple featured collection section on your homepage, per section select a collection.
