Hello @ArnauP Yes it’s possible to have variant options have different picker types.

Always backup themes before changing files

For Dawn based themes change the picker-type’s logic in /snippets/product-variant-picker.liquid so it defaults to drop downs. Yes it is possible to have the Size option as dropdown. You can follow the instructions given by @PaulNewton or if you are not good with code enough and can break the theme coding it by your ownself, then I would highly recommend to seek help of a developer.
