I currently have 11 different coloured apple watch bands and 5 product listings for different designs that each have all 11 colours as variants. how do i make it so for example i have 6 blue bands in stock and then someone buys 1 design in blue and another design in blue it will change my stock from 6 to 4.

This issue can be avoided if you create the products based on designs, add the 11 colors as variants, and add the stocks accordingly. So now, if a 'Blue" strap from Design 1 is purchased, it will not affect the ‘Blue’ strap from Design 2. You can also have a separate ‘item group ID’ for the designs, further reducing confusion.
