Can anyone tell me if you can have separate shop pages on Shopify, for example, Page 1 that has Category 1 products and Page 2 that has Category 2 products?

You can create different pages for each category and add the featured products section and select the collection you want to show products of.
So for example you have a category for mens. Create a page called mens, add the featured products section to it and select the mens category to show mens products
