My usual recommendation is to spend some time on Shopify theme store and try to find the theme which matches your expectations the most.

You can trial and preview any theme in your store.

I’m sure it wasn’t tens of thousands, a lot of those themes are simple and some people are using basic themes with a little bit of coding

You’re missing the headless in my post – none of your example shops use themes.
