So I am trying to remove the color images that show up on the left media portion of the product page while keeping the right color swatches.

This is because you appear to be using the swatches as the default variant images.
If you don’t have the specific product shot in that color, what image would you show when selecting one of the swatches?
If you want to show the default image no matter which swatch is selected, you will either need to edit the theme to stop certain image thumbnails outputting or look at some sort of swatch app.
I am using Variants Options, Color Swatch app.
Would I be able to code it out?
