Shipping is a nightmare, why is it so difficult to get a good shipping process with all the drop shipping platforms? My products are not getting to my customers and it is difficult to resolve this issue and it leads to cancel orders and lost of customer trust. What can be done about this issue?

Drop shipping in itself, is a nightmare. Google Shopping is designed for merchants that have products in stock, not really for drop shipping, hence your issues.
But your question is not really related to Google Ads or Google Merchant Center, which this AMA event is about. For clients I manage, I don’t handle customer orders, I only assist with advertising and product data information.
You might want to talk about this with your drop shipper if they have advice how to reduce cancellations. Or consider asking on reddit, or on the Shopify community (not this event) as I am sure there are plenty of people that can give you advice.
