We are now able to make templates for almost all our pages except the main collections list.
How would I be able to achieve multiple collection listings?

Thanks for reaching out.
By default, if you are using a Shopify theme, you have the option to add a Collection List to the homepage of your online store. With that being said, if you would like to add the collection list to the homepage we will need to navigate to the Theme Editor by selecting Online store > Customize. Once you are in the theme editor, we can add a new section to have the collection list added to the homepage of your online store. This will allow your customers to view the collection images and select the categories listed. I took a screenshot from my test store to show you the section I am referring to:
Alternatively, you can add a navigation button to All Collections on your store, this will add another page to the online store. To do this, you will need to navigate to Online store > Navigation and make edits to the main menu. We will need to select Add menu item to create a collections list for all collections. Once we have added the new menu item, we will need to make sure that the button link is All collections.

That doesn’t seem to be a solution to the question asked. What am I missing?

I also want to “to achieve multiple collection listings,” I assumed I would do this by duplicating the collection listing template/s it/themself/s - to have more than one that I can use, simultaneously, in different places on the website. Unfortunately when I copied the templates and sections they did not become available to me like other templates have.
I would never list all collections, but I might want to list different sets of collections different places. Like different gift guides. Of course I can use the collection list section - but there are times I’d rather have a full page grid of collections.
