Has there been any update or changes to be able to set a product with a variable price? This would be most helpful and seems silly that it isn’t available. I don’t use this feature enough to warrant paying for an app to do this but often enough that it’s annoying it’s not available.

Actually, Shopify still doesn’t have built-in variable pricing where customers can enter their own price, but there are a couple of workarounds. If you only need a few pricing options, you can create product variants with different prices. Another option is using a custom line item property, which lets customers input a price, though this requires some minor code edits.
If you need true pay-what-you-want functionality, you’d need an app, but I get that paying for one isn’t ideal if you don’t use it often
