I recently opened by Shopify store for children’s clothing and started using Google Ads. I can see that some days we get more impressions and clicks than others, but I’m not sure how to maximize this using Google Ads to get more clicks. Is there a specific budget I should be spending? Any specific things to look at to make the ads more attractive? Any advice would be appreciated!

I would first spend time improving the data feed. If you just export your shopify data to Google Merchant Center, it will not be fully optimized. As what works for your website, will be different for Google Shopping.
I first recommend you have a look at all the attributes that you can improve, here is a full list of attributes and recommedations: Product data specification - Google Merchant Center Help

Then once you have improved your data feed, you can begin increasing your budgets.
But make sure if you have different categories, such as socks, leggings, sweaters etc, that you create specific ad assets for each category. Meaning unique headlines, descriptions, images and videos. Assuming you are using Performance Max. Which is a suitable campaign option.
