I am currently setting up my shopify payments and I am putting my name and date of birth, but because I am under 18 it won’t let me proceed. Should I do the name of my parent? And if so, would it affect their taxes?

I do want to emphasize that we are unable to provide legal advice, and recommend consulting with a legal expert if you have additional concerns about liability and tax requirements.
With that being said, as per Shopify Terms of Service 1.2 users must meet the following requirement:
"You must be the older of: (i) 18 years, or (ii) at least the age of majority in the jurisdiction
where you reside and from which you use the Services to open an Account."
As such, you may consider opening a joint venture with your parent with their consent and approval. Alternatively, you may also choose to open a business with another adult that can take liability and responsibility.
Since this is a business, you will still need to ensure you meet all legal requirements of both owning and running it.
