I am looking for a way to prepare and plan campaigns. There are countless apps that offer this, but with all the ones I’ve looked at, I can only change the entire category and not the products individually.
Does anyone know of an app that allows me to set an individual sale price for each item and plan this for a specific date?

In case you haven’t found a solution yet, you can do what you’re asking with Product Automator, down to the variant level, by creating rules like this:
After selecting the condition(s) to identify the item, you select a date and time to schedule the price change. It’s also customizable in case you need extended functionality.
Maybe you can try WS Instant Bulk Price Editor.You can set individual price by formula like +,-,/,
let price=price1.2 or price=price-10 and so on.
