I didn’t realise you were able to change the name of your store and domain and have opened a new store (still on free trial) with the new name I would like. Does that mean when I request to change name it will say it’s already taken? Eek!

I am not sure I understand your query 100% so I am hoping you can clarify for me please.
If you are concerned that the .myshopify.com URL for your store is NOT what you want your customers to see, then no worries! You can point a custom domain with the URL of your choosing to your store. You can do this by either purchasing the domain name you want via Shopify, or pointing your own third party domain to your store.
Are you at the beginning if your journey with this store at the moment? I’d love to help you out with some business growth ideas - how do you feel things are going at the minute? Is there anything you’d like to improve or change?

I already have a store and want to change the name of it. However I didn’t know that was possible, so I created a new store with the new name. Can I now close the new store and just change the name of my original store to the new name?

You can certainly change the store’s name, and use a custom URL but you cannot change the .myshopify.com URL for any store - however this will never be seen by a customer if you are using a custom domain. The store’s name can be edited by going to settings > general settings from you store’s admin, and editing the store name. The new/wanted name can be sued to the old store by using a custom name as outlined in my previous post, no problem! I hope this helps.
