I would like to make two headers, one with the logo on the left and the visible search bar and below that to have all my categories.

I will attach a picture to this post, this being the best example that I could have find about what I want to achieve.

It is possible but not without customizing the theme. o I suggest ask/hire a developer to achieve it.
