I came across another Shopify Merchant who copy pasted our policies, product write ups and keeps using our images to sell similar Products - basically copying our entire brand 
I take my own images, style and write my own content, is there anything I can do to make him stop? I’ve emailed and he says ‘he will’ but then I see new designs and content a few months later Surely this is a breach of Copyright Laws in Aus…

You can report the merchant at https://www.shopify.com/legal/tools/report-an-issue/report-a-merchant but besides that, you could try to find out domain registrar of those sites and report them there too.
