There are other data collected for customers than is displayed or exported in the csv file in the Customer screen. For instance, ‘Date added as a Customer’ is one of the Sort options. How can I get that field (and other fields) to be included in the export CSV?

It doesn’t look like Shopify supports exporting the “Date added as a Customer” field.
I’d look at something like Matrixify. According to their help docs, they will be able to accomplish exporting this field (and others).
Conversely, Customer Fields has robust custom data management options including the support for exporting custom metafields. Just throwing out a few options for you.

Matrixify app can indeed export detailed Customer information in a CSV or XSLX file format, including the Created At date of the Customer, date when Customer was created in the Shopify store, along with many other fields.
