While there is no way to completely disable the checkout that I am aware of, there is a workaround you can apply to achieve the same result.
What you can do is use an app such as Call for Price which allows you to hide the add to cart and adjust the functionality of the button to your desired outcome. For example, instead of adding the product to the cart, it directs to your contact form stating that an invoice will be submitted and to contact for the invoice.
In the meantime, I’d love if you could provide your strategy and thought process for providing an invoice instead of the traditional model. There could be additional feedback and support we can provide!
