Yes, and not only that, you may expect to get suspended in the future by Google Merchant Center. As this program requires you to allow sales made from anywhere in the world. Simply limit the countries for delivery to US and Canada.
The reason you might get suspended from the program is because Google needs to check your product details, and this can happen from anywhere in the world.
Now to answer your question, does it hurt your performance, no. But it will when you are suspended.

Because I’m not willing to have my products viewed in every country - is it worthless for me to try Google Ads - or is there also a stipulation that my shop needs to be able to be viewed from everywhere in order to use Google Ads?

Google only stipulates that products need to be accessible by everyone. Quote: People who click your ad should view landing page content that meets the requirements for Shopping ads, regardless of location, device, your ad targeting choices, or any other variable.
