Does anybody have insight into integrating Shopify Launchpad app with a headless eCommerce architecture?
I’m wondering what might be possible with this app and the limitations - if at all possible?

You’ve come to the right place for questions like this. Launchpad (for Shopify Plus) has some features that rely on the Online Store Channel. These features are publishing a theme, turning on bot protection, setting the password page. These would not be able to work with a headless architecture approach. However, you will be able to use Launchpad for product publishing, scripts, and discounts.
