How can I optimize a product for women’s apparel but it falls in multiple categories and has numerous keywords. Should I make multiple products or how can I make sure it shows up broadly on all of those levels?

Unfortunately you can not create multiple listings of the same product, as Google Merchant Center policy only allows 1 listing per unique product. As you can imagine this leaves room for abuse if left unchecked.
I recommend that you optimize the title to include the keywords that are important and are relevant to your product, however at the same time avoid keyword stuffing as this violates editorial guidelines.
A product should not in theory have many categories, for exmaple if you are selling a dress, the only category is dresses.
Or a t-shirt, which is tops and shirts.
So maybe you meant something else? Can you share more details what you are referring to? Like did you mean you are selling something like a gift item, that fits into multiple gifting seasons, such as valentine, then mothers day, etc?
It’s swimwear, but also versatile as shapewear, bodysuits daily wear too. But it also has specific size features for pear shapes, apple shapes and hourglass shapes. They have quite a lot of features. Just a smaller catalog store. Wondering if it makes sense to have multiple of the same product but name it differently or highlight a certain feature of it? Or would that not be ideal for how Google shops is set up with Shopify?
I would only add keywords in the title that has the most amount of traffic, and make sure that your titles are human readable, and avoid keyword stuffing.
So don’t add titles like this:
Blue Widget Brand Shapewear, Bodysuit, Pear Shape, Apple Shape, Hourglass Shape.
The above title is just keywords stuffing and will look unprofessional, and may get you suspended if it’s done to a lot of products.
Instead add this in the description.
For the title, focus on the important keywords and keep it human readable.
