How do I edit my product banner to another text other then “products”? Can I add a blurb here to describe the product & collection?

You could try to choose Collection list on the top dropdown menu instead of Collection then on the sidebar menu, select Collection Page list section and you’ll be presented with the Heading section where you can replace the new text.
E.g as the picture below:

I have a suggestion for you to add banners to your store. There are apps on the Shopify app store that allow you to do so easily. And the best part is that no code is required to do the same. You can simply pick the template, and make changes as required with the text that you want or create a completely new one from the app itself.
