I am trying to show my clients variants as multiple choice instead of a drop down menu.

I appreciate that you have included a screenshot of an example, that is super helpful! Could you let us know which theme is being used? As this context will allow us to see what is available for the online store setup. If you are unsure about which theme is live on the store, you can navigate to the Theme Editor and select the three dots that are located towards the top left of the page. I took a screenshot from my test store to show you the section I am referring to:
