I’m offering a customer a $100 discount code to spend on the site, but I’m aware that he might not be able to spend $100 in one shopping experience (we have limited items that are around $18 and it would be tough to spend $100 in one sitting). How should I set it up so that he could potentially use the discount multiple times, but that Shopify would keep track of how much he’s spent so that it doesn’t go over the $100? Is that the “Limit number of times this discount can be used in total”?

May I ask if you want to limit what products the customer can purchase with the credit? If not, I suggest simply creating a gift card for them. That way, you can put a $100 value on the gift card which they can use as they please, rather than all at one time. When you issue a gift card, you generate a gift card code and email it to a customer without receiving any payment in return. To do so, you can follow these steps:
From your Shopify admin, go to Products > Gift cards.
Click Issue gift card.
Enter the initial value of the card.
In the search box under Find or create a customer, enter a customer’s name or email address to select or create a customer.
If you want to set an expiry date for the gift card, then select Set expiration date, and then select a date. The gift card expires at midnight on the day following the expiry date in the store’s time zone. Make sure that you follow the laws for your country about gift cards.
Optional: Enter a Note for your reference. The note is visible when viewing the gift card in your Shopify admin, but is not visible to the customer.
Click Save to issue the gift card.
