It’s worth looking into the app called Bestsellers reSort as they offer some terrific advanced sorting functionality. They allow you to sort collections based on sales over X number of days so it should suit your needs.

You can do this with the Rank King: Best Seller Ranking app. You can use the collection sort feature to automatically sort any collection by weekly best sellers or best sellers of the last x days etc.. Alternatively you can use the widget to show your weekly best sellers anywhere in your store theme.
