How do I allow my customer to edit their store accounts and update details like, birthday, gender, etc?
Apps are needed.
It’s currently a manual admin task no native feature for customer self service profile editing.
I’d contact support directly and complain that it’s hard to find info help.shopify.com for any specifics on exactly what data a customer can edit themselves this info or how to add the ability.
And I’d search the forums for customer edit type of posts talking about this missing feature.

For extra data information you will need an app to access that info securely and to make the form UI for that information.
Metafield apps like customer-fields from https://heliumdev.com/apps/ can do this, and scriptable automation apps like usemechanic could also be made to handle updating data.
And apparently needing apps will be doubly so for the new customers account system where liquid customizations are not a feature.

You can try the app in my signature. It turns the account page into a more appealing and functional customer portal where customers can see their order history and edit their addresses and profiles (names, gender, phone number, birthday). Gender and birthday save in customer metafields, so all info remains in Shopify.
