You will have a default fulfillment location (your business address or whatever you select) in Shopify to start. When new orders come in they will be fulfilled to that location.
Just ship the orders yourself and enter the tracking number in Shopify afterwards, it will mark the order fulfilled and send the notification to the customer with the tracking info.

I don’t believe it’s possible to remove a default location, there will always be a location assigned to an order. Every product that has inventory needs to have a location with inventory stocked, so just set the product to your location only and it will show up like that in the order.
