Hello Shopify world. I am wondering on how to create a Mix and Match Bundle (like build your own box kinda thing) option or page with our using any app. Your help is very much appreciated.

The bundle inventory is automatically set based on the available inventories of the bundle item(s), including the inventories of the variants. Proper quantity will also be taken out of the inventory of each bundle that is being purchased.
Bundle Kit bundles are built on top of normal Shopify products and Shopify supports up to 3 variant options and 100 variants per product, therefore, for your example, you will first need to create a dummy bundle product in Shopify.
To achieve your desired outcome, you would first need to create a dummy bundle product in Shopify.
Under ‘Options’, you can do the following:
Option name 1: Product 1
Option values: all variants
Option name 1: Product 2
Option values: all variants
Option name 1: Product 3
Option values: all variants

You can effectively implement your “Mix and Match Bundle” using the Easify Product Options app 
. This app allows you to create the products within your bundle as custom options directly within the app. These options can then be seamlessly added to your Bundle product. Here’s an example of “Cookie Mix” where customers can select up to X flavors:

You can make a Mix and Match Bundle from the back-end without an app using variant options or line item scripts (Shopify Plus only). Make a ‘Build Your Box’ product with fields such as ‘Slot 1’, ‘Slot 2’, etc., and use pricing rules or cart scripts to get total dynamically.

To create a Mix & Match Bundle or a “Build Your Own Box” page, I’d highly recommend using a third-party app that’s designed specifically for that purpose — like BOGOS App.
With BOGOS, you can easily set up flexible bundle rules and various conditions, while avoiding many of the common setup errors that occur when trying to build it manually.
