I’m trying to set up a automatic discount for 25% off all Products. But I dont have a entire store or inventory option in the Discount set window? How can i do a entire inventory ??

Yes while creating a discount you do not get a option to provide discount over your entire catalog,
But you do get an option to create a discount for specific collection,
So first create a automatic collection named “Catalog” or “All products” whatever you feel is good, then set the condition to “price > 0”.
As shown in below image:
Then once you are done with creating a collection, come to discount section, and create an automatic discount with choosing collection which you just created in step above
You can see more in the image attached below:
And once you have done this just hit save and your task is done
