Are Add OnsJust a type of product added as a varient to specific products. IE adding candy to a flower order

That is a great question! As Shopify is allows for merchants to add products to their online store, we do not have a specific function or feature that would allow your customers to receive an add-on product depending on the items of the order. I can definitely see how this would be beneficial for you and other merchants that use the Shopify platform so I am going to provide this as a suggestion to our developers.
With that being said, there are third-party applications that can assist you with this feature and allow your customers to select add-ons to their order. I found a couple of recommendations and wanted to provide them, feel free to take a look through them:

It depends what kind of add-on you want to add to a product. For example you could set up variations of a product whereby the options are add-ons for that core product. You could do like:
Option 1: No add-on (default)
Option 2: Add-on 1
Option 3: Add-on 1+2
The main thing with these set ups are that all your variations become bundles and if you need better inventory control or fulfilment automation you need to use a bundle app to connect up what all the options component SKUs are.
Our bundle app will let you connect up all your products to correct SKUs and we then update their inventory based on the component stock level. We also have the additional option of unbundling orders made for a bundled product into the component SKUs post purchase. This way the order lines are only for components and can be fulfilled as per normal.

I hope to see this some day. I have several electronic products where the buyer can choose to include an AC power adapter. Currently I create the adapter option as a variant, but that doesn’t quite work as smoothly because then I have incorrect quantities. I just want them to be able to choose the adapter as an add on so I don’t have to fudge variant quantities. I could create a separate product for the adapter, but my business is not in selling adapters .. I don’t want people buying the adapter unless they buy one of the products that the adapter goes with.

Add-Ons are mostly products related to the main product that are usually bought together, and merchants display them as add-ons mostly with an offer to encourage customers and don’t let them miss the other things related.
