To understand the situation better, can you confirm that your Abandoned Checkout email is created within Marketing>Automations? If so, the name these Shopify Email templates are pulling is determined by Shopify Email settings.
So to change the name open Shopify Email app then go to Settings. Scroll down to Template branding and click Customize. There you will see an option to update the Store name.
Whatever your store name was at the time of creating this automation is what’s presented in the footer. In order to get the name showing there changed to it’s updated version, we’ll want to make a new abandoned checkout automation within Marketing>Automations section. This updates all the information on the email, and will change that store name for you. I have the steps for you below:
This should help you get your updated store name appearing as needed! The downside here is that any work you’ve done on the original template may be lost, but you will be able to re-create your work within that new draft. It does seem odd not being able to just update that name in the footer freely, so I’ll pass some feedback along to our team.

Hi, I’m having the same issue. My email is showing the old store name and I can’t edit it.
I went to “Settings > Brand”, but there’s no “Store name” field anymore. The page is different from the taken screenshot.
I also tried to delete the automation and create a new one, but the problem persists.
Ok, I think I found the place to update.
I went to “Shopify Email” > Settings > Template branding > Customize, then change the “Store name” field.
