How do I list all the fabrics for my customers to choose from for their custom items. Can I create something where all the fabrics are listed without pricing for them to make their choices?

I make and sell custom Quilted products and customers choose the fabrics they want. Right now that is done through email. I would like a spot on my page where I can list all the fabrics. My url is www.DragonflyCustomQuilts.com

Yes, absolutely you can add fabric list in page.
You need to create another option as Fabric along with Size from product admin

Do I need to list them with prices?
you can do a custom item and maybe list one item with price and mark the rest in description
as price on application, you can not show nil price in shopify store
or create a page for the item and list all items there, so they can see the pictures and they can choose
Alternatively you can make a custom order for your client within orders, create a custom item and send them the invoice to pay, stock will not move with this, if you track stock
