I am trying to add my second blog post to our shopify store but I want the banner image to be different to the last post we did. How do I change or remove the banner image please?

It seems the issue lies with you not utilizing Shopify’s blog correctly. For more clarity, a blog in Shopify is referring to a collection of articles (or Blog posts), and a blog can host multiple articles. From your blog URL below, I can see that you have confused the article with the blog (the host).
To fix this and the banner issue, go to Online Store > Blog posts > Manage Blogs > Edit Blog and rename your blog to “Blog”. If this is done correctly, your URL should become like below. Now if you create 2nd article under Blog, you should see that it has its own banner.
