Running both online and POS. For some of our products I want our clients to see and purchase online but only be able to purchse using the local pick up option.
Is there a setting that can be used with a product to force this choice?

Yes. You can create a new custom shipping profile for such products, and set up only Local Pickup as an option for it’s shipping.
